Chipotle' Ole' Chicken

A little spicy, a little saucy chicken fillet, great for parties, potluck or any weeknight, fast, easy and YUM!"


4-6 boneless chicken breasts
1 cup chipotle mustard* (I use Dietz and Watson, 2 tsp honey
2 cloves garlic, minced.

*You may substitute brown mustard, wasabi, or any type you like.


Mix together mustard, honey and garlic. Salt and pepper both sides of chicken. Place in a roasting pan or jelly roll sheet that has been sprayed with Pam or rubbed with a little olive oil. Spread mustard mixture on chicken (one side) and bake at 375 degrees for about 30 min or until chicken is done. (cooking time will depend on how thick your chicken is)
Serve with buttered egg noodles, or over brown rice that has been cooked in a little chicken broth and garlic. Leftovers make a great wrap- shred chicken, add additional mustard, if desired and roll in a flour tortilla or wrap with shredded cheese and heat in microwave for 30 sec.
