Sausage and Eggplant Casserole

Spicy and sweet"


1 large or 2 medium eggplants
1 lb jimmy dean sausage
1 yellow onion chopped
1-2 cloves of garlic minced
1 cup celery diced
1 cup bell pepper diced
1 (No. 1) can tomatoes
salt and pepper to taste
1 tsp. sugar
1/2 cup seasoned bread crumbs
1/4 cup parmesan cheese


Cut eggplant in half lengthwise, and parboil 10 minutes. Remove and let cool. Scoop out pulp, and mash with fork.
Brown sausage, crumble, and drain on paper towel.
Sauté onion, garlic, celery, and bell pepper in 2 tbsp butter. Add eggplant pulp, tomatoes, seasoning, and sugar. Cook for 5 minutes. Put into baking dish (8x8).
Top with bread crumbs and grated cheese. Bake at 375 for 45 minutes; or microwave for 15 minutes.
