I know it sounds complicated, but it really isn't. I baked the birds in my old Cuisinart Brick Oven at 400 degrees. The brining is what will make the most difference. Brining makes the birds incredibly juicy and is well worth the extra time required. These birds were fantastic!
Cornish Game Hens w/Orange Sauce

1/4 cup of pure maple syrup
1/4 cup very pulpy orange juice
1/4 cup kosher salt
2 Tbsp hot sauce
water as needed

Orange Sauce

1/2 cup Very pulpy orange juice
2 Tbsp of hot sauce.
1/4 cup local honey
2 Tbsp cornstarch

Fried Rice Bed

1 package of Fried Rice Mix.

2 cornish game hens thawed
2 Tbsp of melted butter
1 Tbsp of dill weed
Prepare the brine by getting a large bowl with a cover and mixing all of the brine ingredients together. Place BOTH hens into this bowl and fill it completely to the top with warm water. Cover and refrigerate overnight.

The next day...

Preheat your oven to 400 degrees.

To prepare the hens discard the brine and pat both birds dry.
Add the tablespoon of dill weed to the two tablespoons of melted butter and evenly distribute it between the hens, both inside and out.

Put a sheet of aluminum foil on a baking sheet and place the birds breast side down and put them in the oven.

Bake the birds for 1 hour. Test the doneness by piercing the thigh and looking for clear juices to run out.

While the birds are baking, go ahead and make the rice by following the package directions. When its done, just evenly spread it out on a platter. While you're at it, take some fresh basil leaves and kinda just tear them up and put them on the rice bed.

Now make up your orange sauce by whisking everything together in a glass bowl. Pop this in a microwave oven and heat it on high for 3 minutes and 30 seconds. This will be hot so be careful!

When the birds come out put them on the rice bed and slowly pour the orange sauce over.

This is GOOOOOD eaten'!
