Beer Braised Chicken and Scallops

Chicken and Scallops
Chicken and Scallops cooked together to make a tasty combination."


3 Tablespoons olive oil
1 teaspoon lemon pepper
6 boneless skinless thighs (about 2 pounds)
1 bottle (12 ounces) dark beer
1/2 pound fingerling potatoes
1-1/2 pounds Portobello mushrooms
1 bunch green onions cleaned and rough chopped including green tops
1/4 cup white wine
1 cup low sodium chicken broth
2 Tablespoons corn starch
1/2 cup heavy cream
1/2 teaspoon chervil
3 cups cooked brown rice hot


In large dutch oven heat olive oil over medium high heat.

Sprinkle chicken with lemon pepper add chicken to dutch oven cook five minutes.

Turn chicken cook an additional two minutes.

Add next seven ingredients. Cover simmer for ten minutes add scallops cook an additional 5 minutes.

Combine cornstarch cream and chervil add to chicken mixture thickens slightly serve over hot brown rice.
