White chocolate goodness!
2 cups granulated sugar
¾ cup evaporated milk
½ cup butter
1 cup white chocolate baking chips
1 cup marshmallow cream
½ cup sweetened shredded coconut
½ cup chopped macadamia nuts
1 teaspoon coconut flavored extract

1. Butter an 8 inch square baking dish. Line bottom with foil, extending foil over 2 sides.
2. Place sugar and evaporated milk in a large microwave safe bowl and stir slightly to combine. Add butter and cook on high in microwave until butter is melted. Stir again and continue cooking until mixture just begins to hold its shape when a teaspoon. is placed in cold water or until a candy thermometer reaches 234 degrees--about 8-10 minutes. Remove from heat and stir in white chocolate chips and marshmallow cream, stirring until combined. Add coconut, nuts and coconut extract.
3. Continue stirring until mixture begins to loose it gloss, about 2 minutes. Pour into prepared dish and smooth. Let cool. Lift out of dish with foil "handles" and cut into 16 pieces.
