Vegan Sugar Cookies

Makes very tender and delicious cookies without any eggs or animal products! I think this recipe tastes better than regular sugar cookies but you can be the judge. ;)


Makes 30-40 small cookies


1 cup vegan margarine 1½ cups organic powdered sugar ¼ cup applesauce 1 teaspoon vanilla ½ teaspoon almond extract 2½ cups sifted organic unbleached flour 1 teaspoon baking soda 1 teaspoon cream of tartar

Mix thoroughly margarine, powdered sugar, applesauce, vanilla and almond extract. Mix dry ingredients together-flour, baking soda and cream of tartar. In 3 batches add this to the wet ingredients. Cover and chill for 2-3 hours in 3 flattened disks. (For easy rolling later.) Preheat oven to 375 degrees. Roll dough to about a ¼ of an inch. No matter how thick or thin you make them, each sheet should have all the same thickness of cookies so they bake evenly. Bake on un-greased cookie sheet for 5 to 6 minutes. Remove ASAP from pan and let cool.
