Triple Chocolate Cherry Cupcakes

Cupcakes: 5 tablespoons butter 1 cup brown sugar 1 egg 1½ teaspoons vanilla extract 1 cup whole milk 2¼ cup all-purpose flour 2 teaspoons baking powder pinch of salt 4 teaspoons cocoa powder ¼ cup chocolate chips 15 maraschino cherries, finely chopped Frosting: 2 tablespoons butter 1 cup confectioners' sugar 1 teaspoon vanilla extract 3 tablespoons all-purpose flour 2 teaspoons cocoa powder 1½ oz. water 20 maraschino cherries for decorating

Instructions

Preheat oven to 350 degrees. With mixer, blend butter, brown sugar and egg. Add vanilla extract and milk. Sift in flour and baking powder. Add salt, cocoa and chocolate chips. Mix batter until smooth. Put paper liners into muffin tins. Fill ⅔ full with batter and bake in center of oven for 20 minutes. For frosting, mix the butter, confectioners' sugar, vanilla extract, flour, cocoa and water into a smooth frosting. After cupcakes have cooled completely, spoon on frosting and spread evenly to cover tops. Top each cupcake with a cherry.
