Torta Della Nonna


2 cups all purpose flour
1 egg plus
2 egg yolks
½ cup sugar
3 Tbsp butter
3 Tbsp olive oil

2 cups of ricotta
½ cup pine nuts
Juice and zest of one lemon

Preheat oven to 375. Separate eggs in 2 small mixing bowls. Add the whole egg to the bowl with the yolks and set aside. Combine butter and olive oil into a microwave safe bowl, melt the butter and blend the ingredients. Measure flour into a large mixing bowl and create a well. Pour eggs, butter and olive oil mixture, and sugar in the center and gradually pull the flour into the center with a fork. When the dough is thick enough, turn out onto a lightly floured surface and knead into a ball with hands. Allow the dough to rest for ten minutes.

Make the filling by mixing the rioctta, pine nuts, sugar, lemon zest, juice, and eggs in a mixing bowl until creamy. Roll out the pastry to form 2 12 in. circles. Place one circle inside a 9 in. cake pan and press into bottom and sides. Spread the ricotta mixture evenly over this layer. Place the remaining circle of dough over the top and pinch together. Trim excess. Place in the oven and bake for 35-40 min. place cookie sheet under the torta to catch drippings.
