8 oz. mascarpone cheese
18 oz. lady fingers (hard cookies)
3/4 cup whipping cream.
4 oz brewed coffee
2 egg yolks
3 oz sugar
8 oz melted semi sweet chocolate

With a food processor, reduce the hard lady fingers to fine crumbs.
In a small sauce pan over a pan of boiling water mix egg yolks and half of the sugar until thick. With a mixer, mix mascarpone cheese, cream, remaining sugar, coffee and egg mixture until all ingredients are incorporated. Then add the lady finger crumbs and incorporate as well.
Once all ingredients have been mixed together, cover the bowl with plastic wrap and let cool in the refrigerator for 2 hours minimum.
Remove the bowl from the refrigerator. Melt the chocolate in a microwave safe bowl.
From the mixture, create small balls and dip into chocolate.
Chill for at least 2 hours.
