Delicious Homemade Apple Pie
6 very large granny smith apples
1 tablespoon lemon fresh lemon zest
¾ c sugar
2 tablespoon cinnamon

Place a large strainer into a large bowl; make sure there is at least 4 inches of space between the bottom of the bowl and strainer.
Peel, core and slice the apples and place in the strainer.
Sprinkle the lemon zest over apples and mix in.
stir the cinnamon into the sugar blend well.
Pour the cinnamon sugar over the apples and stir the apples so that they are completely coated. you may have to remove the strainer and pour the sugar that feel through back onto the apples.
let the apples set for 3 - 4 hours; until all the liquid drains to the bottom of the bowl.
Prepare your favorite crust.
Remove the strainer of apples and pour the liquid/juice into a medium saucepan and heat stirring often. Cook until the juice reduces and thickens.
Place the apples into your crust and pour the reduced juice over the apples. Place your upper crust onto the apples and seal the edges. Vent your crust at the top.
Bake for 15 min. at 425 degrees; lower temp to 350 degrees and bake for an additional 30 minutes or until crust is golden. Optionally, you can brush the crust with an eggwash and sprinkle with sugar prior to baking. Let cool and enjoy!
