Dumplings (Canederli) with Berry Sauce. Beautiful to look at and better to eat.
¼ cup fresh lemon juice
½ cup sugar
2 bags frozen mixed berries
1 tablespoon salt
6 tablespoons butter
1 pound ricotta cheese - drained
2 large eggs
1 cup flour

Pour the fruit, lemon juice and sugar into a small sauce pan. Simmer gently for 10 minutes. Set aside, covered.
For the dumplings:
Place the ricotta into a large bowl. Stir to break up any large lumps. Blend in eggs and ¼ teaspoon of salt. Sprinkle flour on top, fold into cheese mixture.
Bring a large pot of water to a gentle boil.
Also have a fry pan with butter melted warmed and ready to go.
Taking an ice-cream scoop or large spoon (both should be dipped in water), scoop out about a ¼ cup of the cheese mixture. Drop into the water. Continue doing this until the pan is full. Boil, gently unto the dumplings rise to the top. Then coninue boiling for about 5 minutes.
Take the dumplings out of the water with a slotted spoon. Place into the fry pan with the butter.stir so the dumplings are coated with butter. Let them sit in the pan to firm up.
Serve on a plate spooning the berry sauce over the top.
