This is a wonderful, pasted down recipe for our tasty sweet potatoes NC is known for and loved.

4 cups boiled sweet potates
½ cup butter
1 teaspoon. vanilla flavoring
1 teaspoon. lemon juice
½ cup carnation milk
1 teaspoon. cinnamon
dash of salt
½ cup peacans
½ cup flaked cocoanut
2 cups of miniature marshmellows

Preheat oven to 350 degrees
Combine and mix sweet potatoes, butter and sugar.
Add eggs, vanilla, lemon juice, milk, cinnamon and salt. Stir in pecans and coconut.
Spoon into a large greased baking dish.
Bake for 20 minutes.
Remove from oven and add marshmellows on top.
Place back into the oven to melt and brown the topping.
