Sweet potato soufflé


3 cups mashed sweet potatoes 1 cup sugar 1/2 teaspoon salt 2 eggs 1/3 stick margarine 1/2 cup milk 1 t. butter flavoring 1 t. Sherry flavoring (optional) Topping: 1 cup brown sugar 1/3 cup flour 1 cup chopped pecans 1/3 stick margarine

Mix the above non-topping ingredients and pour into a one quart casserole baking dish thoroughly buttered. Mix topping and sprinkle over top of soufflé. Pre-heat oven to 350 and bake for 35 minutes. May be served as vegetable or dessert
