Sweet Potato Pie

My mom always made a special dinner on Sundays with dessert. She was a great cook because she lovingly prepared each meal.

3 medium sized sweet potatoes 3 T melted butter ½ t vanilla extract ⅔ c sugar ¼ t salt 3 eggs ½ t cinnamon ½ t nutmeg ½ c heavy cream 2 T Kahlua Liqueur 1 unbaked pie crust

Bake or boil sweet potatoes with skins on until tender. Peel and mash potatoes through a ricer. (Preheat oven to 450 degrees.) Add beaten eggs, sugar, cream, melted butter, beat on medium high speed with a hand mixer. Add remaining ingredients and mix well. When done, turn mixer to low speed and lift slightly out of bowl to remove excess. Discard strings from the potatoes that are left clinging to the beaters. Bake in hot over for 10 minutes. Reduce heat to 350 degrees and bake 35 to 50 minutes or until inserted knife will come out clean and pie is slightly brown on top.
