Sweet Potato Cookies

These cookies are a healthy alternative to the traditional dessert being vegan, egg free, and dairy free. It is possible to make these refined sugar free by replacing sugar with honey or maple syrup. They are as sweet as any other cookie and make an excellent base for any add ins that are desired.




1 Sweet Potato ¼ cup brown sugar ⅔ cup flour ⅓ cup oats 1 teaspoon baking soda 1 teaspoon cinnamon ½ teaspoon ginger ¼ teaspoon nutmeg ¼ teaspoon clove 1 teaspoon vanilla

Wash and then boil a sweet potato in it's skin until it's soft and ready to be mashed. Once the potato is cooled enough to touch, peel it and mash it as fine as possible using a fork or a blender. Add the sugar, vanilla, cinnamon, ginger, nutmeg, and clove to the potato and let sit. In a separate bowl combine the flour, oats and baking soda. Add dry ingredients to the potato mash in increments, mixing until just combined before adding more. Once mixed, shape into 1 inch balls and place on a lined baking tray. Flatten them with a fork or your hands. Place tray into 350 degree oven for 11 minutes. Take out an let cool. Optional: roll in cinnamon sugar before baking.
