A take on a strawberry pie I cam up with to allow me to utilize the new and wonderful fruit available now. I love Kiwi and knew it would go well with this recipe
1 9 inch pie shell (I use Pillsbury frozen or you can use your own recipe) baked and cooled
3 cups fresh strawberries
½ cup Splenda
½ cup sugar
3 cups sliced kiwi fruit
3 tablespoons cornstarch
½ cup water
4 ounces Neufchâtel cheese (one half brick)

Mash enough strawberries to make one cup. In medium pan stir together sugar and Splenda and cornstarch. Gradually add water and crushed berries. Cook over medium heat stirring constantly until mixture thickens and boils. Allow to boil 1 minute remove from heat and cool.
In stand mixer beat Neufchâtel cheese until smooth. Spread on the bottom of the cooled pie crust.
Fill pie shell with remaining berries and Kiwi fruit alternating them to make a nice design. Pour berry mixture over the fruit chill until set around three hours.
