Preheat oven to 400 Degrees and grease baking sheets. Sift together flour, cream of tartar, baking soda, and salt. In another bowl, combine butter, oil and 1 3/4 cups of sugar until fluffy. Incorporate eggs. Then add dry ingredients and beat to combine. In a small bowl, combine the remaining sugar and the cinnamon. Form balls from the dough mixture and roll in the cinnamon-sugar. Place on baking sheets approximately 2 inches apart (they will certainly rise!) Bake until cookies begin to set and crack (about 10 minutes) Enjoy!
