Rick's Awesome Northstar Cherry Pie

This recipe is for the finest cherry pie you will ever have!!!


8-12 Deep Dish Pie


1½ cups sugar 6 Tbls. flour ¼ teaspoon. salt ½ cup reserved cherry juice Red Food Color as desired 8 cups pitted sour pie cherries-drained 2 Tbls. butter ½ teaspoon. Almond Extract Heavy cream & sugar for top of crust

Preheat 400 degree oven. In heavy saucepan blend sugar, flour and salt together. Add reserved cherry juice and red food color, blend together. Add drained cherries. Cook over medium heat, stirring constantly, until sauce boils and becomes consistency of pie filling. Remove from heat and add butter and extract. Pour into pastry lined deep-dish ceramic pie dish. Cover with top crust. Trim and seal edges. Cut slits in top for steam to escape. Brush top with cream and sprinkle with sugar. Cover edges of pie with pie crust shield or alum. foil. Bake for 45-50 minutes until golden brown. Let pie completely cool at room temperature and serve with whipped cream made only with brown sugar for sweetener-no vanilla- or vanilla ice cream. If any pie is leftover, refrigerate for later.
