Pumpkin Roll

Best pumpkin roll ever.




3 eggs ¾ c. pumpkin 1 c. sugar ¾ c. plain flour 1 teaspoon. Baking soda 1 T. pumpkin pie spice ½ teaspoon. nutmeg ½ teaspoon. Salt Powdered sugar Frosting: 1 c. powdered sugar 4 T. butter 8 oz. Cream cheese ½ teaspoon. Vanilla

Mix eggs, pumpkin and sugar together in Cuisinart Stand Mixer. Stir in dry ingredients, mix well. Bake on cookie sheet for 15 minutes at 375. Remove from oven and immediately flip onto paper towels covered with powdered sugar. Roll up like a jelly roll and let cool. After cooled, unroll and frost center with frosting and roll up again. Sprinkle with powdered sugar. Wrap in plastic wrap and store in the refrigerator. When ready to serve, remove wrap and slice. Can be stored in freezer in case of surprise guests.
