Pumpkin Cookies with Frosting

I reworked a recipe to make a healthier treat which uses nutrient rich ingredients to treat rather than trick callers. This year my 10 year old grandson will help make the treats for his friends.


About 3 dozen treats


1 ½ c. all-purpose flour ½ c. white whole wheat flour 1 ½ t. baking powder 1 t. baking soda 1 t. cinnamon 1 t. grated orange rind ½ salt 2 large eggs 1 c. sugar 1 c. canned pumpkin (not pie mix) ½ c. light olive oil 1 t. vanilla 2 T. chopped walnuts Autumn colored sugar crystals, optional

Preheat oven to 325 degrees. With a whisk combine dry ingredients and set aside. Meanwhile in the large mixer bowl combine the eggs and granulated sugar; beat 1-2 minutes. At low speed add the pumpkin, oil, vanilla and nuts; mix until blended. Slowly add dry ingredients and mix well. With a small scoop drop dough on silicone lined baking sheet. Top each cookie with a pinch of colored sugar. Bake about 16 minutes. emove to rack to cool. Makes 3 dozen treats.
