Pumpkin Bars

Wonderful light Pumpkin Dessert with Cream Cheese Frosting. Makes a good snack for kids after school.

4 eggs 1 cup salad oil 2 cups sugar 1 can pumpkin (15 oz.) Mix all together in a bowl Now Add: 2 cups flour 2 teaspoon baking powder 1 teaspoon soda ½ teaspoon salt 2 teaspoon cinnamon ½ teaspoon ginger ½ teaspoon cloves ½ teaspoon nutmeg (You can substitute 3 ½ teaspoon pumpkin pie spice for these last 4 if you have it.) FROSTING: 1 6 oz pkg. cream cheese ¾ stick butter, softened 1 Tbsp milk 1 teaspoon vanilla 4 cups powdered sugar Cream Butter and Cream Cheese, add powder sugar, slowly mix in vanilla and milk until smooth.

In large bowl mix first 4 ingredients until well blended. Add the next 8 ingredients, mix well and pour into 12X18 jelly roll pan. Bake at 350 for 25 minutes (DO NOT OVER BAKE) Let cool and top with Frosting. This dessert is best made the day before, it can seem dry when warm, but once it is cooled and set its very moist.
