Pumpkin Bars

Seasonal bar... moist, chewy and delicious.

Ingredients

  • 2 cups of sugar 
  • 1 cup of salad oil 
  • 4 eggs 
  • 2 cups of flour 
  • 2 teaspoon baking soda 
  • ¼ teaspoon salt 
  • ½ teaspoon cinnamon 
  • 1 small can of pumpkin 

Frosting: 

  • 4oz cream cheese 
  • 3 cups of powdered sugar 
  • 1 stick of margarine 
  • milk, as needed

Instructions

  1. Heat oven to 350 Degrees. Mix all bar ingredients using mixer's low speed until the mixture is combined. Then, mix for about 2 minutes at medium speed. Pour into a greased 14 x 10-inch pan and bake for 25-30 minutes. 
  2. When cake is cooled, frost. 
  3. Frosting: Mix cream cheese, margarine, and powdered sugar together. Slowly enough milk to make frosting spreadable. 
  4. Cut into 2 inch squares and enjoy.
