1 cup firmly packed brown sugar
½ cup butter, melted
2 large eggs, lightly beaten
½ cup flour
½ teaspoon baking powder
½ teaspoon vanilla extract
2 cup chopped pecans

Instructions
Combine sugar and melted butter, beating to dissolve sugar crystals. Add beaten eggs and mix together well. Stir in flour that has been mixed with baking powder. Stir until just moistened. Add vanilla and fold in pecans. Do not overmix.
Spoon mixture into lightly greased mini muffin pans. (¾ full)
