A delicious mini muffin that tastes like a little pecan pie, but not overly rich. I usually make a double batch because they go fast!
- 2 eggs
- ⅔ cup melted butter
- 1 cup brown sugar
- ½ cup flour
- 1 cup chopped pecans

- Mix butter and eggs together, then blend with dry ingredients.
- Spray mini muffin pans with non stick spray and fill about ⅔ full with batter. I use a liquid measuring cup with a pour spout to pour the batter in the pan. Mix up the batter in the bowl every now and then to keep the pecans from staying on the bottom.
- Bake at 350F for about 20-25 minutes. Tops of muffins will be firm.
- Let stand a few minutes before removing. May use a mini spatula to loosen around edges before removing.
