Pecan Pie Bars

A wonderful quick and easy alternative for pecan pie lovers!

Ingredients

Crust:
3 cup flour
¾ cup softened butter
¾ cup sugar
½ teaspoon salt

Filling:
3 eggs, slightly beaten
1 cup sugar
1 cup light corn syrup
2 Tbsp melted butter
1 teaspoon vanilla
1½ cup chopped pecans

Preheat oven to 350 & grease a jelly roll pan. Crust: Mix all crust ingredients together with a low speed mixer 'til crumbly ... will look dry. Press firmly into the prepared pan. Bake about 20 minutes or until light golden brown.

Filling: Mix all except pecans 'til well blended. Stir in pecans & pour over the pre-baked crust. Carefully put back into oven & bake about 25 minutes 'til sets. Cool completely before cutting into squares.
