Peanut Butter Cookies - 2 Dozen

I have experimented for years with the right peanut butter cookie recipe. This is what I have finally come up with and it contains no flour. Truly a wonderful recipe.

For the cookie dough: 1-16 oz. jar of all natural peanut butter (just peanuts and salt) 1 & ¼ cup of brown sugar 1 teaspoon of soda 2 eggs 1 teaspoon of vanilla flavoring

1. Preheat oven to 350 degrees. Combine above ingredients mix well. 2. For the final step: pour ½ cup of white sugar on a small plate 3. Form dough into 1 inch balls and roll in white sugar. Cross hatch balls as you flatten them with a fork. 4. Bake for 15 minutes until golden brown. Cool in pan for 5-10 minutes before removing or cookies will crumble. After cooling they will hold together and be just perfect!
