Peanut Butter Chocolate Crunch Bars

A heavenly blend of peanut butter and chocolate on a granola-like crust, served as a cookie/candy bar. Highly addictive!!




4 Cups quick oats 1 Cup (2 sticks) of butter melted ¾ Cup white sugar ¾ Cup light brown sugar 1½ Cups crunchy peanut butter 12oz. bag of semi-sweet chocolate chips

Pre-heat your oven to 350. In a large bowl, mix the oats, butter and sugars until thoroughly blended. All oats should be wet. Press the oat mixture into a cookie sheet. Bake for 7-9 minutes, or until light golden brown. (You may bake longer for more crunch, or less for a slightly more chewy bar.) Allow the crust to cool for 10 minutes, and then spread the peanut butter evenly over the crust. Sprinkle chocolate chips across the peanut butter. Place the pan back in the warm over for about 3 minutes, until chips start to melt. Remove from oven. Using the back of a spoon, swirl or spread the melting chocolate chips evenly across the top. Some peanut butter will melt and swirl with the chocolate too, but that is OK. Keep spreading until you have a nice, even layer of chocolate. (It will be slightly lumpy due to the peanuts in the peanut butter.) Cool completely. Variations: 1. Use creamy peanut butter. 2. Use more or less PB or chocolate to get the blend you like best. 3. Refrigerate and serve cold. (I've made these for 25 years, and we enjoy them best when they are slightly chewy, extra PB, extra chocolate chips, and served cold!) These are highly addictive and are a huge hit every time I serve them!!!
