Orange Blossom Special Cake

This is the best cake. Light and not too sweet.


For the Cake:

  • 1 1/4 cup water 
  • 1 box yellow cake mix 
  • 2 cans of oranges, drained 
  • 1 can mandarin oranges, drained 
  • 4 eggs 
  • 1/3 cup butter 
  • 1/3 cup oil 
  • 1 big box vanilla instant pudding 
  • 1 can mandarin oranges, drained

For the Frosting: 

  • big tub cool whip 
  • 1 large can crushed pineapple, drained
  • 1 small box vanilla instant pudding 
  • 1 can mandarin oranges, drained 
  • sour cream

For the Cake: 

  1. Mix all the ingredients together except for the oranges. Add the drained mandarin oranges and mix with a spoon, taking care to not break the orange slices. Bake according to instructions for cake mix. I use 2 round cake pans to make a double layer cake. 

For the Frosting: 

  1. In large bowl, mix together the cool whip, instant vanilla pudding and pineapple. Add additional sour cream until you reach the thickness desired. 
  2. Once the cake is cool, add a thick layer of frosting to the cake. Decorate the top of the cake with the mandarin oranges.
