It is the perfect combination of salty and sweet, the bacon flavor does not overwhelm the cookie, but rather enhances it with its caramelized smokey flavor. This treat is sweet, but don't tell your friends about the secret ingredient, most are too afraid of the bacon to try it!
Makes about 3-4 dozen
½ cup (1 stick plus 6 tablespoons butter), softened
¾ cup firmly packed brown sugar
½ cup granulated sugar
1 teaspoon vanilla
1½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
½ teaspoon salt
3 cups uncooked oatmeal
½ cup chocolate chips
3 tablespoons brown sugar
6 pieces of apple wood smoked bacon

Preheat the oven to 350 degrees. Place bacon on pan and coat lightly with 3 tablespoons of brown sugar. Cook the bacon for 15-20 minutes or until crispy. Let it cool. In a large bowl, mix the softened butter with the brown and regular sugar until creamy. Add the eggs and vanilla, beat well. In a separate bowl combined flour, baking soda, cinnamon, and salt mix well. Combined the wet and dry and add the chocolate chips. Take the cooled bacon and chopped it into small pieces, it should make about ¼ cup, add to the mix.
Drop dough on a pan covered with parchment paper, with 1 inch between them. Bake the cookies for 10-15 minutes or until slightly brown.
