My mother always made this for picnics. I make it for potlucks at work.
2½ cups all purpose flour
1½ cups sugar
1½ teaspoons baking soda
½ teaspoon salt
1 teaspoon vanilla
¾ cup chopped almonds
1½ cups (about 10 ounces) frozen strawberries, thawed and drained
1⅓ cups (11-ounce can) mandarin oranges, drained
1½ cups flaked coconut
¾ cup sugar
¼ cup milk
½ teaspoon vanilla
½ cup butter

Preheat oven to 350 degrees. Grease a 15x10x1-inch jelly roll pan. In a large mixing bowl, combine flour, sugar, soda, salt, vanilla, eggs, nuts, strawberries and mandarin oranges. Blend at low speed until moistened then beat at medium speed for about three minutes, scraping bowl occasionally.
Pour batter into the jelly roll pan, spreading to the edges. Sprinkle coconut on top. Bake in 350 degree oven for 30 to 40 minutes until top springs back when touched lightly in center. Remove from oven and prepare Glaze.
To prepare Glaze, combine sugar milk vanilla and butter in medium saucepan. Bring mixture to a boil. Stir constantly for two minutes. Remove from heat and spread over warm bars. Cool completely. Cut into 2x3-inch bars.
