Mini Blueberry Cheesecakes

Always a hit at my house, your friends and family won't be able to resist these flavorful treats!




  • Two 8oz packages cream cheese, softened
  • ⅔ cup sugar 
  • 2 eggs 
  • ¼ cup sour cream 
  • 1 teaspoon vanilla 
  • pinch salt 
  • vanilla wafers 
  • Can of blueberry pie filling, or blueberries macerated with sugar

  1. Line 12 muffin tin with cupcake papers and place one vanilla wafer (flat side down) in each. Set aside. Pre-heat oven to 375° F. 
  2. Combine cream cheese and sugar until blended. 
  3. Stir in eggs, sour cream, vanilla, and salt. Mix until fully combined.
  4. Spoon mix into the muffin tin, about ½ to ⅔ full. 
  5. Bake for 12-15 minutes, or until set. Mini cheesecakes will collapse slightly as cooling. 
  6. Once cooled, spoon blueberry pie filling or fresh blueberry mixture on top. Enjoy!
