- Two 8oz packages cream cheese, softened
- ⅔ cup sugar
- 2 eggs
- ¼ cup sour cream
- 1 teaspoon vanilla
- pinch salt
- vanilla wafers
- Can of blueberry pie filling, or blueberries macerated with sugar

Instructions
- Line 12 muffin tin with cupcake papers and place one vanilla wafer (flat side down) in each. Set aside. Pre-heat oven to 375° F.
- Combine cream cheese and sugar until blended.
- Stir in eggs, sour cream, vanilla, and salt. Mix until fully combined.
- Spoon mix into the muffin tin, about ½ to ⅔ full.
- Bake for 12-15 minutes, or until set. Mini cheesecakes will collapse slightly as cooling.
- Once cooled, spoon blueberry pie filling or fresh blueberry mixture on top. Enjoy!
