Mary's Light Cake

Brown Sugar cake with penuche type frosting light in color but not in taste.




Cake: 1 c. boiling water 2 teaspoon. baking soda ⅔ c. butter, soft 1 c. brown sugar 2 eggs 2 teaspoon. vanilla 2¾ c. flour 1 c. buttermilk 1 c. sugar Frosting: ½ c. butter 1 c. brown sugar ¼ c. milk 1¾ c. xxx sugar 1 teaspoon. vanilla

Cake: Add soda to boiling water and set aside to cool. Cream together butter and sugars. Add eggs and beat well, then add vanilla. Sift together remaining dry ingredients. Add dry mixture to cake alternating with buttermilk. Begin and end with dry mixture. Lastly, add water/soda mixture. Pour into a greased and floured 9" x 13" pan. Bake at 350F for 25 to 35 minutes or until toothpick comes out clean. Frosting: Melt butter in saucepan over low heat. Add brown sugar, boil for 2 minutes over low heat stirring constantly. Add milk, continue stirring until mixture comes to a boil. Remove from heat and cool. Add powdered sugar and vanilla, beating well until spreading consistency.
