Lemon Bars

Delicious yellow squares with lemony filling




Crust 2 cups all purpose flour ½ cup powdered sugar 1 cup margarine or butter, softened Filling 4 eggs, slightly beaten 2 cups sugar ¼ cup all purpose flour ¾ teaspoon baking powder ½ cup lime juice Frosting 1 cup powdered sugar 2 to 3 tablespoons lime juice

Heat oven to 350 F. In large bowl combine all crust ingredients at low speed until crumbly. Press mixture evenly in bottom of ungreased 13x9 inch pan. Bake at 350 F for 20 to 30 minutes or until light golden brown. Meanwhile, in large bowl combine all filling ingredients except lime juice; blend well. Stir in ½ cup lime juice. Pour mixture over warm crust. Return to oven and bake an additional 25 to 30 minutes or until top is light golden brown. Cool completely. In small bowl combine 1 cup powdered sugar and enough lime juice for desired spreading consistency; blend until smooth. Spread over cooled bars. Cut into bars.
