Creamy Mint Ice Cream

Makes about 5 cups

Not your ordinary mint ice cream, ours calls for a lot of bright green, fresh mint for a real natural flavor. While blending it gives it an attractive pastel hue, it can be strained after steeping to create an ice cream that’s white in color with a more muted mint flavor

Ingredients

  • 1 cup whole milk
  • 2½ cups packed fresh mint leaves
  • ¾ cup granulated sugar
  • pinch salt
  • 2 cups heavy cream
  • 1 tablespoon pure vanilla extract

Preparation

  1. In a medium saucepan set over medium-low heat, bring the milk just to a boil. Remove from heat and add the mint leaves; let steep for 20 to 30 minutes. If you desire a milder mint flavor, strain, and discard the mint leaves after steeping, but for a more intense ice cream, blend the milk/mint mixture using an immersion blender.
  2. Add the sugar and salt to the steeped milk/mint mixture. Whisk to combine, until the sugar is dissolved. Stir in the heavy cream and vanilla extract. Cover and refrigerate until well chilled, preferably overnight.
  3. Assemble the Mix It In™ Soft Serve Ice Cream Maker with paddle secured and dispenser handle in its upright position. Turn on and pour in the chilled base. Churn until the desired serving consistency is reached, 25 to 30 minutes. If ice cream is not thick enough, pour back into the freezer bowl and continue mixing until desired consistency is reached, checking every few minutes. The ice cream will have a soft, creamy texture.
  4. Serve in cups or cones, adding toppings while dispensing ice cream.
