Homemade Thin Mints

From my family to yours this is a sure winner!!!!

½ Cup of butter, softened ½ cup of sugar 1 egg ½ teaspoon vanilla extract 1½ cups of all-purpose flour 1½ teaspoon of bake powder ½ teaspoon salt 4 - 5 tbls of milk 1 - cup fresh mint, finely copped with your Cuisinart Food Processor 16 oz (1 lbs.) of Chocolate Candy Coating

In your food processor bowl, cream butter and sugar. Then add in egg and vanilla and process until creamy. Combine dry ingredients add to creamed mixture add milk a little at a time to check consistency. Stir in mint. Shape into two 9 inch rolls; wrap separately in plastic wrap. Chill until firm (approx. 1 hour). Unwrap firm dough and cut into thin slices. Bake at 350 for 10-12 minutes or until edges are slightly golden. Let cool. In a microwave, melt candy coating until smooth (1 - 2 minutes depending on your microwave) and stir. Dip each cookie top and get a spoon to dip bottom of cookie into chocolate coating. Place on waxed paper until hardened.
