This is a recipe that was given to my family and me from an old family friend who was a native of Maui.
Ingredients
TOPPING
- 20oz can of crushed pineapple
- 1 stick of butter, melted
- 1 cup brown sugar
- ½ cup coconut flakes
- ½ cup sliced almonds
- 2 tablespoons of dark rum
CAKE FILLING
- 1½ cup of flour
- ¾ cup of granulated sugar
- 2¼ teaspoon of baking powder
- ½ cup coconut flakes
- ½ cup sliced almonds
- ½ teaspoon salt
- 1 tablespoon dark rum
- ¼ teaspoon ginger
- 1 teaspoon vanilla extract
- ¾ cup whole milk
- 2 eggs
- 1 stick of butter, softened

Instructions
- Pre-heat oven to 325F. Lightly grease a 9"x9" baking pan.
- Mix topping ingredients in a medium sized bowl and pour into the baking pan. Ensure the topping is spread evenly.
- Add the cake filling ingredients into a medium sized bowl and mix completely. Evenly spread the cake filling over the topping.
- Bake for 30-40 minutes OR until the top is golden brown.
