Hawaiian Pineapple Upside Down Cake

This is a recipe that was given to my family and me from an old family friend who was a native of Maui.

  • 20oz can of crushed pineapple
  • 1 stick of butter, melted
  • 1 cup brown sugar
  • ½ cup coconut flakes
  • ½ cup sliced almonds
  • 2 tablespoons of dark rum 


  • 1½ cup of flour
  • ¾ cup of granulated sugar
  • 2¼ teaspoon of baking powder
  • ½ cup coconut flakes
  • ½ cup sliced almonds
  • ½ teaspoon salt
  • 1 tablespoon dark rum
  • ¼ teaspoon ginger
  • 1 teaspoon vanilla extract
  • ¾ cup whole milk
  • 2 eggs
  • 1 stick of butter, softened

  1. Pre-heat oven to 325F. Lightly grease a 9"x9" baking pan.
  2. Mix topping ingredients in a medium sized bowl and pour into the baking pan. Ensure the topping is spread evenly.
  3. Add the cake filling ingredients into a medium sized bowl and mix completely. Evenly spread the cake filling over the topping. 
  4. Bake for 30-40 minutes OR until the top is golden brown.
