Grama Nelson' Rice Pudding

Light and Creamy Rice Pudding, it is the best, and has been in our family for over 60 years, I love it when my mom makes it, she said it is one of the things she remembers most about her grandmother that raised her.




2 cups Minute Rice or 1 cup Par Boiled Rice Milk Sugar 3 beaten eggs 1 teaspoon Vanilla Cinnamon Sugar Cream

Cook your rice according to the package. Drain off the water on the rice when it is finished cooking if you use Par Boiled rice. Cover your rice with milk, then add sugar to your taste, as sweet as you like it. Bring to a almost boil. Beat 3 eggs, then take some of the heated milk and mix with the beaten eggs, then pour back into the milk mixture, cook until thickened. Add 1 teaspoon vanilla. Pour into dessert cups, add cream and Cinnamon sugar.
