Fresh Apple Cake

Delicious moist apple cake with glaze.




1¼ C cooking oil 2 C sugar 3 eggs 2½ C all purpose flour 1 teaspoon salt 1 teaspoon baking soda 2 teaspoon baking powder 3 teaspoon vanilla, divided 3 C peeled, chopped apples 1 C chopped pecans 1½ C powdered sugar 2 tbls water

Pour oil in large bowl. Add sugar and eggs, beat well. Sift flour, salt, baking soda and baking powder. Gradually add flour mixture to creamed mixture. Add 1 teaspoon vanilla. Fold in apples and pecans. Pour mixture into prepared 10 inch tube pan that has been lined with wax paper. Bake at 350 degrees for 1⅓ hours. Cool slightly on wire rack Invert into plate, removing wax paper. For glaze, combine powered sugar, water and 2 teaspoon vanilla. Drizzle over cooled cake.
