Empty the Pantry Cookies

Use all those leftover holiday cookie ingredients in these mouth watering cookies! It's easy to make substitutions. Try swapping peanuts for macadamias or cherries for raisins!

1 cup brown sugar, firmly packed ½ cup granulated sugar 1 cup trans fat free margarine (ie. Smart Balance) 2 eggs 1 teaspoon vanilla ¾ cup all-purpose flour ¾ cup white whole wheat flour 1 teaspoon baking soda 1 teaspoon cinnamon 2¼ cup quick oats ½ c butterscotch chips ½ c macadamia nuts, roasted and salted (other nuts can be substituted) ½ cup semi-sweet chocolate chips ½ c raisins ¾ c coconut flakes, firmly packed ½ c white chocolate chips

Preheat oven to 350 degrees. Beat the margarine and sugars together until fluffy. Add eggs and vanilla and mix well. Combine both flours, baking soda and cinnamon. Add flour mixture to sugar mixture and beat well. Stir in oats, raisins, nuts, coconut, and all chips. Drop by rounded teaspoonfuls onto an ungreased cookie sheet. Bake 14-18 minutes, or until golden brown. Cool on wire rack
