These Personal Vanilla Rum Pecan pies with a Crème De Menthe Whipped topping were inspired by the Kentucky Derby and the mandatory Mint Julep while watching the race. Once a few friends had them though, they quickly became a favorite at Thanksgiving and Christmas for our friends and family. I always have to make a double batch to send some home with everyone.
Ingredients (Pecan Pies):
4 table spoons White Sugar
6 table spoons Light Brown
¼th cup of Salted Butter (Softened)
¾th cup Karol syrup
¼th cup Real Maple syrup
4 Large Eggs
1 shot Vanilla Rum
Chemical Butter Spray or some Oil and a Paper Napkin
3 tubes of 8 count regular size Crescent Butter Flake Rolls (Regular Crescent rolls will work too)
¼th cup (To coat dough in)
½ pound bag of Pecans halves
Ingredients (Crème De Menthe Whipped Topping):
1 shot Crème De Menthe Liquor
½ cup Powdered Sugar
16 oz. Heavy Whipping Cream
High in Sugar and other goodness.
Directions (Pecan Pies):
Step 1: Into a blender add 4 table spoons of White Sugar, 6 Table spoons of Light Brown Sugar, ¼th cup of Salted Softened Butter, ¾th cup of Karol Syrup, ¼th cup Real Maple syrup, 4 Large Eggs and 1 shot of Vanilla Rum. Blend everything together.
Step 2: Chemical pan spray or Oil 24 Muffin tin holes.
Step 3: Separate out the 3 tubes of 8 count regular size Crescent Butter Flake Rolls. Roll each Crescent Roll into a ball and coat it with a light dusting of Flower.
Step 4: Roll each Crescent Roll ball into a 6 inch circle and place in a Muffin tin hole like a pie crust.
Step 5: Fill each crust ⅔rd full with the Pecan halves
Step 6: Into each Crescent Roll pie crust, pour in enough pie filling to almost cover the Pecan halves.
Step 7: Bake@ 350F for 15-18 minutes or until crust browns. Once cooked, cool the pies in the muffin tin(s) before removing, to set filling.
Directions (Crème De Menthe Whipped Topping):
Step 1: In a medium mixing bowl pour in the 1 shot Crème De Menthe, ½ cup Powdered Sugar and 16 oz. of Heavy Whipping Cream.
Step 2: Whisk till you make a firm Whipped Cream.
Step 3: Chill your Whipped topping for 1 hour before piping onto the Pecan pies.
