1 frozen nine inch deep dish pie crust
1 6 ripe plantains
12 ounces vanilla flax milk
2 tablespoons melted unsalted butter
1 teaspoon allspice
3 eggs beaten
½ cup maple syrup
Whipped Cream (optional)
Nutmeg (optional)
Preheat oven to 400 degrees Fahrenheit.
Place 1 pie crust in ungreased 9-inch glass pie plate. Press firmly against side and bottom set aside
Cut ends off ends of plantains remove peel cut plantains into ½ inch pieces. Line cookie sheet (with edges) with foil lightly spray foil with nonstick spray. Place plantains on foil cover with additional foil bake for 10 minutes turn plantains cover bake an additional 10 minutes or until plantains are extremely soft but not mushy. Allow plantains to cool enough to be handled. Puree plantains put into food processor bowl. Puree for 3 minutes, after three minutes add flax milk, butter, and allspice process 3 more minutes add eggs and maple syrup process three more minutes. Pour plantain mixture into pie crust. Cover edges of crust with tin foil
Lower temperature of oven to 375 degrees. Place pie in center of the oven bake for one hour or until knife inserted in center
