This frosting pairs very well with the Gluten-Free Golden Cupcakes,but is also a great alternative to any vanilla frosting.

Ingredients

  • 1cup non-hydrogenated vegetable
  • shortening
  • 2cups confectioners’ sugar, sifted
  • 1tablespoon pure vanilla extract
  • ¼teaspoon kosher salt
  • 1-2 teaspoons water, optional

Preparation

  1. 1. Put the shortening into a medium mixing
  2. bowl. Mix on Speeds 2 to 3 to make
  3. creamy, about 30 seconds. Add the sugar
  4. and continue to mix on Speeds 2 to 3,
  5. then add the vanilla extract and salt. Mix
  6. again, on Speeds 2 to 3, until smooth and
  7. fluffy, about 30 seconds.
  8. 2. If the frosting is too thick, add enough
  9. water to mix to desired consistency.
