Creamy and decadent, this dessert is reminiscent of chocolate covered cherries. It’s wonderful for holidays (Christmas, President’s Day, or Fourth of July) or for luncheons and showers. For those who don’t have an electric ice cream maker, it can also be prepared using a mixer.
10-12 one half cup servings
½ C Cherry Flavored Ocean Spray Craisins
½ C mini semi-sweet chocolate chips (Nestle)
⅔ C (7 oz) sweetened condensed milk (Borden’s)
8 oz can Ocean Spray Jellied Cranberry Sauce
2 C heavy whipping cream
1 teaspoon McCormicks cherry flavored extract
1 teaspoon McCormicks rum flavored extract.

(Hint: it is helpful to prepare the mixture in a container that pours easily) Place Cherry Flavored Ocean Spray Craisins in a small bowl, cover in boiling water and soak for 30 min.
Blend sweetened condensed milk, cherry extract, rum extract, and Ocean Spray Jellied Cranberry Sauce until smooth with no jelly pieces remaining.
Add cream and stir until blended completely
Pour into 1.5 quart Cuisinart electric ice cream/sorbet maker frozen container and freeze according to directions for 25 minutes.
Drain Cherry Flavored Ocean Spray Craisins and add to ice cream slowly through the top
Add chocolate chips and continue freezing for 2-3 minutes. Stop if the mixture begins to come through the top. (Note: the ice cream will be in soft serve form)
Place ice cream in a 1½ qt. Plastic freezer container and allow to ripen in a freezer for 6 hours to allow flavors to set.
Ice cream can be served earlier, but the flavor improves with the additional freezing.
No electric freezer? No problem. Stir sweetened condensed milk and cream together and chill for 30 minutes.
Use a blender to mix extracts, and Ocean Spray Jellied Cranberry Sauce until smooth
Whip chilled milk and cream with a hand or stand mixer until soft peaks form
Stir cranberry mixture into the whipped cream and milk
