Crust:

16 tablespoons (2 sticks) unsalted butter, cold, and cut into ½-inch cubes

Filling:
½ cup dried cranberries
 
½ cup granulated sugar, plus additional for finishing
 
½ cup packed light brown sugar
 
4 tablespoons ground arrowroot
 
½ teaspoon ground cinnamon
 
¼ teaspoon ground nutmeg
 
¼ teaspoon ground allspice
 
½ teaspoon kosher salt
 
3 cups whole cranberries, fresh or frozen
 
3 large apples, peeled, cored, and halved (Golden Delicious, Ginger Gold, and Pink Lady tend to be the tastiest)
 
Juice of ½ medium lemon
 
1 tablespoon vanilla extract

 1 large egg, lightly beaten with 1 teaspoon water
