2 sticks of butter
½ cup confectioners sugar
1 teaspoon vanilla
2¼ cups of flour
¼ teaspoon salt
¾ chopped pecans (or any nuts)
Mix together 2 sticks of butter, ½ cup confectioners sugar, 1 teaspoon vanilla. Sift together 2¼ cups of flour ¼ teaspoon salt Stir in ¾ chopped nut (I use pecans,you can also use walnuts or hazelnuts) Sift flour and salt together. With electric mixer,cream the butter in a large bowl till light, gradually add ½ cup confectioners sugar and beat till fluffy. Add vanilla. Mix in the dry ingredients ,then add the nuts. Refrigerate at least one hour (I don't usually chill I make it as soon as I finish mixing everything) Preheat oven 350 degrees Form dough into 1 inch balls, place about one inch apart on an ungreased cookie sheet. Bake at 350 until lightly brown on the bottom (about 12 to 15 min) Just bake until firm to touch, don't over bake,while still warm roll in confectioners sugar ,let cool and then roll again in confectioners sugar.
