This rich chocolate sauce is not only fat-free, but it is ready in 3 minutes. Tell no one how easy it was to make. Light cooking time will give a nice syrup consistency and cooking to the end time will produce a rich, thick fudge. You can use hot, warm or room temperature. If you plan to use your sauce within a few days, leaving it out of the refrigerator is fine. If you have prepared it in advance, you can store in a lead-free glass jar. It keeps well for a few weeks.

½ cup cocoa
½ cup sugar
½ cup brewed coffee or water
1 teaspoon. corn starch
1 teaspoon. vanilla

Mix all, except vanilla, in a saucepan and bring to a boil, stirring to a smooth consistency. Once the boil begins, reduce heat to bubble at a lower temperature for 2-3 minutes maximum. Three full minutes will take you to a fudge-like consistency. Remove from heat and stir in vanilla. Use immediately or store in a glass jar. You can keep at room temperature for several days or in the refrigerator for a very long time.
