Makes twelve to fourteen 4-inch griddle cakes

These griddle cakes make a great foundation for any dessert topping, from ice cream to whipped cream to grilled fruit. Mmmmm, delicious!

Ingredients

  • ¾cup unbleached all-purpose flour
  • ¼cup cocoa powder, sifted
  • ½teaspoon sea salt
  • ½teaspoon baking soda
  • 3tablespoons granulated sugar
  • 1cup buttermilk, less 2 tablespoons
  • 1large egg
  • 2tablespoons unsalted butter, melted
  • and cooled to room temperature
  • ¼teaspoon pure vanilla extract
  • 3tablespoons unsalted butter, melted
  • 2teaspoons light brown sugar
  • 2firm bananas, each cut into
  • 2-inch slices

Preparation

  1. 1. Insert the plates on the griddle side. Preheat the
  2. Griddler® Compact to High in the flat position.
  3. 2. While the griddle is preheating, combine the
  4. flour, cocoa powder, salt, baking soda, and
  5. granulated sugar in a medium bowl. Stir with
  6. a whisk to combine.
  7. 3. Put the buttermilk into a large liquid measuring
  8. cup. Add the egg, melted butter, and vanilla.
  9. Whisk to combine well and then add to the dry
  10. ingredients. Stir until just combined (a little
  11. lumpy is OK).
  12. 4. Prepare the bananas. In a small mixing bowl, mix
  13. the 3 tablespoons melted butter and light brown
  14. sugar together until well combined. Add bananas
  15. and toss to coat.
  16. 5. Once griddle has preheated, place banana pieces
  17. on griddle plates and cook until lightly golden
  18. and just softened, about 5 minutes per side.
  19. Remove and reserve. Carefully wipe griddle plates
  20. clean with paper towel.
  21. 6. Using a ¼-cup measure, drop griddle cake batter
  22. evenly onto the griddle plates. Cook cakes until
  23. bubbles form, 3 to 4 minutes; flip and cook until
  24. done, about 2 minutes longer. Remove.
  25. 7. Serve cooked bananas on top of griddle cakes.
  26. For extra indulgence, top with a dollop of freshly
  27. whipped cream and drizzle with chocolate sauce
