1. Preheat oven to 500˚. Put graham crackers in blender and chop until a powder. Melt butter; mix with graham crackers in springform pan. Pat down until bottom of pan is covered evenly. 2. Mix the cheese, sugar, flour, vanilla and almond extracts until smooth with electric mixer. Add the eggs, one at a time. Add the maple syrup and cream. 3. Pour the mixture into the pan and bake for 10 minutes, or until top turns golden brown. Reduce temperature to 225˚; bake for 4 hours. Cool on wire rack until room temperature; release sides of the pan.
