This cake is the true flavor of fall. Serve this warm out of the oven with a dollop of whipped cream and your head will be filled with memories of fresh picked apples from the cider mill.

Ingredients
3 beaten eggs
1 cup canola oil
1 teaspoon baking soda
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ teaspoon salt
1 teaspoon vanilla
1¾ cup sugar
2 cups flour
4 apples-skinned-cut into small pieces (johnnygold or golden delicious work very well)
1 cup finely chopped walnuts

Instructions
Preheat oven to 350 degrees. Grease and flour a 13x9 cake pan. Mix sugar, flour, baking soda, cinnamon, nutmeg, salt, vanilla, eggs, oil just till blended. Then fold in the apples and nuts by hand. Spread in the pan evenly. Bake for 45-50 min or until toothpick comes out clean. Serve warm with a dollop of whipped cream
