Heavenly Cheesecake

This is a NY style cheesecake that is very creamy."


3/4 c. chopped nuts
3/4 cup graham cracker crumbs
1/4 cup sugar
6 T butter melted

4 large pack. Cream cheese-softened
1-1/2 c. sugar
1 T fresh lemon juice
1 teasp. vanilla
4 large eggs

TOPPING (optional)- Great to put on if cheescake cracks
1 carton sour cream
1 teasp. vanilla
1/4 c. sugar


Mix crust ingredients together and pat into bottom of lightly greased spring form pan- Put in refrig. while you make filling.
Beat cream cheese until almost smooth into a Cuisinart food processor. Add ¾ cup of the sugar and mix into cream cheese. Then add remaining 3/4 c. sugar and beat until thoroughly mixed.
Pulse in lemon juice and vanilla.
Beat in 4 eggs.
Add cream cheese mixture to crust
Lightly shake pan to get rid of any air bubbles.
Bake at 350 degrees for about 60-70 minutes - or until cheesecake starts to lightly brown.
Take from oven and set aside for 15min. to cool.
Keep oven temp on at 350 degrees.
Mix topping together and spread on cake after it has cooled for the 15min. Don’t worry if the cake has cracked. This will cover all cracks.
Return to oven for 10-15 min.
Take out and let cool
Put in refrig. overnight. Take out of pan the next day and return to refrigerator ntil you want to serve it. When I am going to serve it, I put fresh strawberries over the top (optional)
